Description
A creamy, garlicky Chicken Scampi served over pasta, inspired by Olive Garden’s classic dish.

- 2 boneless, skinless chicken breasts
- 8 ounces of linguine or fettuccine pasta
- 4 tablespoons of butter
- 4 tablespoons of olive oil
- 4 cloves of garlic, minced
- 1 cup of chicken broth
- 1 cup of heavy cream
- 1/2 cup of grated Parmesan cheese
- 1/4 cup of chopped parsley
- Salt and pepper to taste
- Optional: crushed red pepper flakes
Instructions
- Cook the pasta by bringing a large pot of salted water to a boil, adding the linguine or fettuccine, and cooking according to package instructions until al dente. Drain the pasta, saving about a cup of pasta water.
- Season the chicken breasts with salt and pepper. Heat 2 tablespoons of butter and 2 tablespoons of olive oil in a large skillet over medium heat. Add the chicken and cook for about 5-7 minutes on each side until golden brown. Remove the chicken and let it rest.
- Sauté the garlic in the same skillet by adding remaining butter and olive oil, tossing in chopped garlic and sautéing for about a minute until fragrant.
- Pour in the chicken broth and let it simmer for 2-3 minutes. Add heavy cream and stir in Parmesan cheese until the sauce thickens. Toss in parsley and season with salt and pepper.
- Slice the chicken into strips. Add the cooked pasta to the skillet with the sauce, tossing to combine. If needed, add a splash of reserved pasta water to achieve the desired consistency. Finally, add the chicken strips back and toss to combine.
Notes
Garnish with fresh parsley and serve with salad and breadsticks.
