- 1 medium onion, chopped
- 2–3 celery stalks, diced
- 2–3 carrots, sliced
- 4 cups vegetable or chicken broth
- 1 cup milk or heavy cream
- Salt & pepper to taste
- 2–3 tablespoons butter
- Optional: bacon bits, chives, or cheese for garnish
Instructions
- Prep your ingredients by chopping, peeling, and dicing the vegetables.
- In a large pot, melt the butter over medium heat. Add the onions, celery, and carrots; sauté until soft.
- Add the diced potatoes, broth, salt, and pepper. Bring to a gentle boil, then reduce heat, cover, and simmer for 15-20 minutes until potatoes are fork-tender.
- Optionally blend part of the soup for a creamier texture while keeping some chunks.
- Stir in the milk or heavy cream and heat for another 5 minutes, adjusting the seasoning as necessary.
- Serve hot and garnish with optional toppings like bacon bits, cheese, or chives.
Notes
Choose starchy potatoes like Russet for creaminess. Customize with spinach or garlic if desired. Leftovers taste even better!
