Ingredients

- 2 cups uncooked long-grain rice
- 4 chicken breasts or thighs
- 1 can cream of chicken or mushroom soup
- 2 cups chicken or vegetable broth
- 2 cups shredded cheddar or mozzarella cheese
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
Instructions
- Preheat oven to 350°F (175°C).
- Spread uncooked rice in the bottom of a 9×13 inch baking dish.
- Layer chicken pieces on top of the rice and sprinkle with seasonings.
- Pour the condensed soup evenly over the chicken.
- Pour the broth over everything.
- Top with shredded cheese.
- Cover tightly with foil and bake for 50-60 minutes without peeking.
- Remove foil and bake for an additional 10 minutes for a cheesy crust.
- Serve directly from the dish and enjoy!
Notes
Feel free to add vegetables like broccoli or bell peppers for extra nutrition. You can also prepare the casserole ahead of time and refrigerate it until ready to bake.
