- 2 ½ tsp baking powder
- ½ tsp salt
- 1 cup unsalted butter, softened
- 2 cups granulated sugar
- 4 large eggs
- 1 cup buttermilk (or regular milk with lemon)
- Zest of 2 lemons
- ½ cup fresh lemon juice
- 1 cup unsalted butter, softened (for frosting)
- 4 cups powdered sugar
- 2 tbsp fresh lemon juice (for frosting)
- Zest of 1 lemon (for frosting)
- A pinch of salt (for frosting)
Instructions
- Preheat your oven to 350°F (175°C) and grease three 9-inch round cake pans.
- Mix the flour, baking powder, and salt in a bowl.
- Cream the softened butter and granulated sugar until fluffy.
- Add the eggs one at a time, mixing until fully incorporated.
- Combine the dry ingredients with the butter mixture, alternating with buttermilk.
- Stir in lemon zest and juice.
- Bake for about 25–30 minutes until a toothpick comes out clean.
- Cool the cakes in the pans for about 10 minutes before transferring to wire racks.
- Beat softened butter for frosting until fluffy, gradually adding powdered sugar.
- Add lemon juice, zest, and salt; beat until creamy.
- Assemble by layering cakes with frosting in between and frosting the entire cake.
Notes
For an extra flavor boost, consider adding vanilla extract to the frosting.
