Description

A fluffy and flavorful lemon layer cake that’s perfect for any occasion.


Ingredients

  • 2 ½ cups all-purpose flour
  • 2 ½ tsp baking powder
  • ½ tsp salt
  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 cup buttermilk (or regular milk with lemon)
  • Zest of 2 lemons
  • ½ cup fresh lemon juice
  • 1 cup unsalted butter, softened (for frosting)
  • 4 cups powdered sugar
  • 2 tbsp fresh lemon juice (for frosting)
  • Zest of 1 lemon (for frosting)
  • A pinch of salt (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease three 9-inch round cake pans.
  2. Mix the flour, baking powder, and salt in a bowl.
  3. Cream the softened butter and granulated sugar until fluffy.
  4. Add the eggs one at a time, mixing until fully incorporated.
  5. Combine the dry ingredients with the butter mixture, alternating with buttermilk.
  6. Stir in lemon zest and juice.
  7. Bake for about 25–30 minutes until a toothpick comes out clean.
  8. Cool the cakes in the pans for about 10 minutes before transferring to wire racks.
  9. Beat softened butter for frosting until fluffy, gradually adding powdered sugar.
  10. Add lemon juice, zest, and salt; beat until creamy.
  11. Assemble by layering cakes with frosting in between and frosting the entire cake.

Notes

For an extra flavor boost, consider adding vanilla extract to the frosting.
