- 2 cups (400 g) granulated sugar
- 1 cup (226 g) unsalted butter, softened
- 4 large eggs, room temperature
- 3 cups (360 g) all-purpose flour
- 1 tsp baking powder
- 1/2 tsp fine sea salt
- 1 cup (240 ml) whole milk
- 2 tsp pure vanilla extract
- Zest of 1 lemon (optional)
Instructions
- Preheat your oven to 325°F (163°C). Grease and flour a 9×5-inch loaf pan or line it with parchment.
- Sift the flour, baking powder, and salt into a bowl and set aside.
- Beat the softened butter and sugar together until light and fluffy.
- Add eggs one at a time, beating briefly after each addition. Add the vanilla and lemon zest, and mix until cohesive.
- Alternate adding the dry ingredients and milk to the butter mixture, starting and ending with dry ingredients.
- Pour the batter into your prepared pan and smooth the top. Bake for 60–75 minutes, or until a toothpick comes out with a few moist crumbs.
- Let the cake cool in the pan for 10–15 minutes, then transfer to a wire rack to cool completely.
