Description

A foolproof, ultra-moist birthday pound cake that’s dense and buttery, perfect for celebrations.


Ingredients

  • 2 cups (400 g) granulated sugar
  • 1 cup (226 g) unsalted butter, softened
  • 4 large eggs, room temperature
  • 3 cups (360 g) all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp fine sea salt
  • 1 cup (240 ml) whole milk
  • 2 tsp pure vanilla extract
  • Zest of 1 lemon (optional)

Instructions

  1. Preheat your oven to 325°F (163°C). Grease and flour a 9×5-inch loaf pan or line it with parchment.
  2. Sift the flour, baking powder, and salt into a bowl and set aside.
  3. Beat the softened butter and sugar together until light and fluffy.
  4. Add eggs one at a time, beating briefly after each addition. Add the vanilla and lemon zest, and mix until cohesive.
  5. Alternate adding the dry ingredients and milk to the butter mixture, starting and ending with dry ingredients.
  6. Pour the batter into your prepared pan and smooth the top. Bake for 60–75 minutes, or until a toothpick comes out with a few moist crumbs.
  7. Let the cake cool in the pan for 10–15 minutes, then transfer to a wire rack to cool completely.
