Description

Delicious Mexican pulled pork tacos that will elevate your taco game with tender, slow-cooked pork and vibrant toppings.


Ingredients

  • 34 pounds of pork shoulder or pork butt
  • 1 onion, roughly chopped
  • 4 cloves of garlic, minced
  • 2 tablespoons chili powder
  • 1 tablespoon cumin
  • 1 tablespoon smoked paprika
  • 1 teaspoon oregano
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 cup chicken broth (or beer)
  • Juice of 2 limes
  • Corn tortillas
  • Fresh cilantro, chopped
  • Diced onions
  • Sour cream or Mexican crema
  • Salsa (store-bought or homemade)
  • Avocado, sliced
  • Limes, for squeezing
  • Hot sauce, optional

Instructions

  1. Marinate and Season: Rub the pork shoulder with chili powder, cumin, paprika, oregano, salt, and pepper. Optionally, marinate overnight.
  2. Slow Cook: In a slow cooker, place the pork, onion, garlic, and chicken broth (or beer) and cook on low for 8 hours or high for 4-5 hours. Alternatively, preheat oven to 300°F (150°C), place in a Dutch oven, cover, and cook for 4-5 hours.
  3. Pull and Shred: Let the pork rest for 15 minutes before shredding with forks. Mix in lime juice.
  4. Assemble Tacos: Layer onto warm tortillas with pulled pork, diced onions, fresh cilantro, sour cream, avocado, and salsa.
