Ingredients

- 1 pound ground turkey
- 1/4 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 egg
- 2 cloves garlic, minced
- 1 tablespoon fresh parsley, chopped
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Grains (quinoa, couscous, or brown rice)
- Cherry tomatoes
- Cucumbers
- Bell peppers
- Spinach or arugula
- Feta cheese (optional)
- Olives (optional)
- Hummus (optional)
- Tahini sauce (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- Mix the turkey, breadcrumbs, Parmesan, egg, garlic, parsley, oregano, salt, and pepper in a bowl until combined.
- Shape the mixture into meatballs about the size of a golf ball.
- Place meatballs on a baking sheet lined with parchment paper and bake for 20-25 minutes.
- Assemble the bowl starting with grains at the bottom, then leafy greens.
- Add the baked meatballs on top.
- Top with chosen veggies, feta, olives, and a dollop of hummus. Drizzle tahini sauce if desired.
- Finish with fresh herbs like parsley or mint on top.
Notes
Make a double batch of meatballs to freeze for later meals. Use airtight containers for meal prepping.
