A delightful treat of sweet Medjool dates stuffed with creamy mascarpone cheese and topped with a luscious maple drizzle.

- 12 large Medjool dates
- 1 cup mascarpone cheese
- 1 tsp vanilla extract
- 2–3 tablespoons pure maple syrup
- 1/2 tsp cinnamon (optional)
- Chopped nuts (optional)
- Dark chocolate shavings (optional)
Instructions
- Preheat the oven to 350°F (175°C). Cut a slit down the center of each Medjool date and remove the pits.
- In a medium bowl, blend the mascarpone cheese and vanilla extract until smooth, adding cinnamon if desired.
- Spoon the mascarpone mixture into the slit of each date.
- Place the stuffed dates on a parchment-lined baking sheet and bake for 10-15 minutes.
- In a small bowl, mix maple syrup with cinnamon if using. Drizzle over warm dates after baking.
- Optionally, sprinkle with chopped nuts or dark chocolate shavings before serving.
Notes
These stuffed dates make for an impressive appetizer or a sweet snack. Pair with ice cream for dessert.
