- 1 cup granulated sugar
- 1 cup brown sugar, packed
- 2 large eggs
- 1 teaspoon vanilla extract
- 3 cups all-purpose flour
- 1 cup unsweetened cocoa powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup chocolate chips (milk, semi-sweet, or both)
- Mini marshmallows, to taste
Instructions
- Preheat your oven to 350°F (175°C).
- Cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the eggs one at a time, followed by the vanilla extract.
- In another bowl, whisk together the flour, cocoa powder, baking soda, and salt; gradually add to the wet ingredients until fully combined.
- Fold in the chocolate chips.
- Scoop a tablespoon of dough, flatten it, and place a few mini marshmallows in the center; cover with more dough to seal the marshmallows inside.
- Place on a baking sheet lined with parchment paper, spacing about two inches apart, and bake for 10-12 minutes.
- Let cool on the tray for about five minutes before transferring to a wire rack to cool completely.
Notes
Chill the cookie dough for about 30 minutes for best results. Experiment with flavors like peppermint or Nutella for variety.
