Description

Delightful cookies filled with a gooey marshmallow center, combining the comforting flavors of hot cocoa and chocolate.


Ingredients

  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chocolate chips (milk, semi-sweet, or both)
  • Mini marshmallows, to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the eggs one at a time, followed by the vanilla extract.
  4. In another bowl, whisk together the flour, cocoa powder, baking soda, and salt; gradually add to the wet ingredients until fully combined.
  5. Fold in the chocolate chips.
  6. Scoop a tablespoon of dough, flatten it, and place a few mini marshmallows in the center; cover with more dough to seal the marshmallows inside.
  7. Place on a baking sheet lined with parchment paper, spacing about two inches apart, and bake for 10-12 minutes.
  8. Let cool on the tray for about five minutes before transferring to a wire rack to cool completely.

Notes

Chill the cookie dough for about 30 minutes for best results. Experiment with flavors like peppermint or Nutella for variety.
