Description

Delightfully gooey cookies with crispy edges and rich chocolate, featuring marshmallow pockets that ooze with each bite.


Ingredients

  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup cocoa powder
  • 1 1/2 cups chocolate chips or chopped chocolate
  • 2 cups mini marshmallows

Instructions

  1. Preheat your oven to 350ยฐF (175ยฐC) and line two baking sheets with parchment paper.
  2. Cream butter with both sugars until light and fluffy (about 2โ€“3 minutes).
  3. Add eggs one at a time, then vanilla, and mix until smooth.
  4. Sift together flour, cocoa, baking soda, and salt, then add to the wet mixture in two additions, mixing until just combined.
  5. Fold in chocolate chips and mini marshmallows gently.
  6. Scoop dough into 2-tablespoon portions and place them 2 inches apart on your baking sheets.
  7. Bake for 9โ€“11 minutes until edges look set but centers still look slightly underdone.
  8. Cool on the baking sheet for 5 minutes, then transfer to a wire rack.

Notes
