Description

A heartwarming and flavorful chicken soup that’s perfect for cozy dinners and romantic evenings.


Ingredients

  • Chicken (thighs or breasts)
  • Butter
  • Garlic
  • Onion
  • Sun-dried tomatoes
  • Chicken broth
  • Heavy cream or coconut cream
  • Spinach (or any greens)
  • Parmesan cheese
  • Herbs/spices (Italian seasoning, thyme, salt, and pepper)

Instructions

  1. Heat butter in a big pot over medium-high heat. Season chicken with salt and pepper, then sear until golden brown on both sides.
  2. Remove chicken and sauté chopped onions and minced garlic until translucent.
  3. Add sun-dried tomatoes, then pour in chicken broth and stir in cream. Simmer for a few minutes.
  4. Slice chicken and return to the pot with drippings. Simmer until fully cooked. Add spinach and cook until wilted.
  5. Sprinkle in grated Parmesan and herbs/spices, stir to combine, then serve.
