Ingredients
- Chicken (thighs or breasts)
- Butter
- Garlic
- Onion
- Sun-dried tomatoes
- Chicken broth
- Heavy cream or coconut cream
- Spinach (or any greens)
- Parmesan cheese
- Herbs/spices (Italian seasoning, thyme, salt, and pepper)
Instructions
- Heat butter in a big pot over medium-high heat. Season chicken with salt and pepper, then sear until golden brown on both sides.
- Remove chicken and sauté chopped onions and minced garlic until translucent.
- Add sun-dried tomatoes, then pour in chicken broth and stir in cream. Simmer for a few minutes.
- Slice chicken and return to the pot with drippings. Simmer until fully cooked. Add spinach and cook until wilted.
- Sprinkle in grated Parmesan and herbs/spices, stir to combine, then serve.
