- 1 cup brie cheese, chopped
- 1 cup apples, diced (preferably Granny Smith)
- 1/4 cup maple syrup
- 2 tablespoons Dijon mustard
- Salt and pepper, to taste
- Fresh herbs like thyme or rosemary (optional)
- Olive oil for cooking
Instructions
- Preheat the oven to 375°F (190°C).
- Butterfly the chicken breasts and season with salt and pepper.
- In a bowl, mix the chopped brie, diced apples, and 1 tablespoon of maple syrup.
- Stuff the chicken breasts with the apple-brie mixture and secure if needed.
- Sear the chicken in an oven-safe skillet with olive oil for 3-4 minutes per side until golden brown.
- Mix the remaining maple syrup and Dijon mustard, then drizzle over the seared chicken.
- Bake in the preheated oven for 25-30 minutes or until the chicken reaches 165°F (74°C).
- Let the chicken rest for a few minutes before slicing and serving with any leftover glaze.
Notes
Let the brie come to room temperature before cooking. You can prep the chicken and stuffing ahead of time.
