Ingredients

- 1 cup quinoa (any color you prefer)
- 2 ripe mangoes, diced
- 1 red bell pepper, chopped
- 1 avocado, diced
- 1/4 cup red onion, finely chopped
- 1/2 cup cilantro, chopped
- Juice of 2 limes
- Salt & pepper to taste
- Optional add-ins: black beans, corn, or grilled chicken
Instructions
- Rinse the quinoa under cold water.
- Cook according to package instructions—usually, boil 2 cups of water for every 1 cup of quinoa and simmer for about 15 minutes.
- Chop your mangoes, bell pepper, and avocado.
- Combine your cooked quinoa and all the chopped ingredients in a large bowl.
- Squeeze the lime juice over the top, sprinkle some salt and pepper, and mix it all together.
- Taste it and adjust flavors as needed.
- Chill in the fridge if you have the time, or dig in right away!
