Description

A vibrant and refreshing salad combining sweet mango with nutritious quinoa for a perfect beach vibes dish.


Ingredients

  • 1 cup quinoa (any color you prefer)
  • 2 ripe mangoes, diced
  • 1 red bell pepper, chopped
  • 1 avocado, diced
  • 1/4 cup red onion, finely chopped
  • 1/2 cup cilantro, chopped
  • Juice of 2 limes
  • Salt & pepper to taste
  • Optional add-ins: black beans, corn, or grilled chicken

Instructions

  1. Rinse the quinoa under cold water.
  2. Cook according to package instructions—usually, boil 2 cups of water for every 1 cup of quinoa and simmer for about 15 minutes.
  3. Chop your mangoes, bell pepper, and avocado.
  4. Combine your cooked quinoa and all the chopped ingredients in a large bowl.
  5. Squeeze the lime juice over the top, sprinkle some salt and pepper, and mix it all together.
  6. Taste it and adjust flavors as needed.
  7. Chill in the fridge if you have the time, or dig in right away!
