Description

A vibrant and nutritious Mango Quinoa Salad that combines sweet mangoes, nutty quinoa, and crunchy veggies, perfect for any occasion.


Ingredients

  • 1 cup quinoa (rinsed)
  • 2 ripe mangoes (diced)
  • 1 bell pepper (diced)
  • 1 cucumber (diced)
  • 1/4 red onion (finely chopped)
  • 1/4 cup fresh cilantro (chopped)
  • Juice of 2 limes
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Start by boiling 2 cups of water in a saucepan.
  2. Add the rinsed quinoa, bring it to a simmer, cover, and let it cook for about 15 minutes.
  3. While the quinoa is cooking, chop up your mangoes, bell pepper, cucumber, red onion, and cilantro.
  4. Once the quinoa is cool, combine it with the chopped fruits and veggies in a large mixing bowl.
  5. Squeeze the lime juice and drizzle the olive oil over the top, then season with salt and pepper.
  6. Give everything a good toss until it’s all mixed up nicely.
  7. Optionally chill it for 30 minutes before serving or enjoy right away.
