Ingredients

- 1 cup quinoa
- 1 ripe mango
- 1 medium cucumber
- 1 small red onion
- 1 bell pepper
- 1/4 cup fresh cilantro
- Juice of 1 lime
- Olive oil
- Salt and pepper
Instructions
- Rinse your quinoa under cold water.
- Combine 1 cup of quinoa with 2 cups of water in a medium saucepan.
- Bring it to a boil, then lower the heat, cover, and let it simmer for about 15 minutes.
- Fluff it with a fork once done and let it cool.
- Dice the mango into cubes.
- Chop the cucumber into bite-sized pieces.
- Slice the red onion thinly.
- Dice the bell pepper and chop up the cilantro.
- Combine the cooled quinoa, diced mango, cucumber, onion, bell pepper, and cilantro in a large mixing bowl.
- Drizzle with olive oil and lime juice.
- Season with salt and pepper to taste.
- Give it a good toss and serve right away or let it sit for 30 minutes.
Notes
This salad is great on its own or as a side dish. Feel free to add optional ingredients like avocado, black beans, or feta cheese for extra flavor.
