Description

A vibrant and refreshing salad packed with juicy mango, crisp cucumber, and fluffy quinoa, perfect for warm days.


Ingredients

Scale
  • 1 cup quinoa
  • 1 ripe mango
  • 1 medium cucumber
  • 1 small red onion
  • 1 bell pepper
  • 1/4 cup fresh cilantro
  • Juice of 1 lime
  • Olive oil
  • Salt and pepper

Instructions

  1. Rinse your quinoa under cold water.
  2. Combine 1 cup of quinoa with 2 cups of water in a medium saucepan.
  3. Bring it to a boil, then lower the heat, cover, and let it simmer for about 15 minutes.
  4. Fluff it with a fork once done and let it cool.
  5. Dice the mango into cubes.
  6. Chop the cucumber into bite-sized pieces.
  7. Slice the red onion thinly.
  8. Dice the bell pepper and chop up the cilantro.
  9. Combine the cooled quinoa, diced mango, cucumber, onion, bell pepper, and cilantro in a large mixing bowl.
  10. Drizzle with olive oil and lime juice.
  11. Season with salt and pepper to taste.
  12. Give it a good toss and serve right away or let it sit for 30 minutes.

Notes

This salad is great on its own or as a side dish. Feel free to add optional ingredients like avocado, black beans, or feta cheese for extra flavor.
