- 2 cups shredded cooked chicken
- 4 cups low-sodium chicken broth
- 1 can (14.5 oz) diced tomatoes
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 tablespoon chili powder
- 2 teaspoons cumin
- Salt and pepper to taste

Instructions
- In a large pot, add a splash of olive oil and sauté the chopped onion and garlic over medium heat until they soften, about 3-5 minutes.
- Add in the chopped bell pepper, shredded chicken, broth, diced tomatoes, chili powder, cumin, and season with salt and pepper. Stir well.
- Bring to a gentle boil, then reduce the heat and let it simmer for about 20-30 minutes.
- Give it a taste and adjust seasoning as needed.
- Spoon the soup into bowls and top with avocado, cheese, sour cream, and cilantro.
