Ingredients

  • Ricotta Cheese
  • Lemon (fresh)

Instructions

  1. Cook the Pasta: Fill a pot with water, bring to a boil, add salt, and cook pasta according to package directions until al dente.
  2. Mix the Ricotta: In a bowl, combine ricotta cheese, zest of one lemon, splash of olive oil, and a pinch of salt and pepper.
  3. Combine the Pasta and Sauce: Reserve about a cup of pasta water, drain pasta, and mix hot pasta with ricotta mixture, adding reserved water if too thick.
  4. Finish with Lemon Juice and Parmesan: Squeeze the juice of half a lemon over pasta and top with freshly grated Parmesan cheese.
