Description

A flavorful and nutritious Lemon Parm Kale Salad that packs a punch with its fresh ingredients and zesty dressing.


Ingredients

Scale
  • 1 bunch of kale (preferably Lacinato)
  • 1/4 cup grated Parmesan cheese
  • 1 lemon (fresh juice)
  • 2 tablespoons olive oil (extra virgin)
  • Salt and pepper (to taste)
  • Optional: croutons, cherry tomatoes, sliced almonds, or avocado

Instructions

  1. Rinse the kale and remove the tough stems. Tear the leaves into bite-sized pieces.
  2. In a large bowl, drizzle olive oil and squeeze in lemon juice. Add a pinch of salt, then massage the kale for 2-3 minutes until softened.
  3. Sprinkle in the grated Parmesan and toss well.
  4. Season with salt and pepper, adding any optional extras if desired.
  5. Plate and serve the salad immediately.

Notes

Best enjoyed fresh, but can be stored in an airtight container for leftovers. The flavors meld beautifully if prepared ahead.
