Ingredients
Scale
- 1 bunch of kale (preferably Lacinato)
- 1/4 cup grated Parmesan cheese
- 1 lemon (fresh juice)
- 2 tablespoons olive oil (extra virgin)
- Salt and pepper (to taste)
- Optional: croutons, cherry tomatoes, sliced almonds, or avocado
Instructions
- Rinse the kale and remove the tough stems. Tear the leaves into bite-sized pieces.
- In a large bowl, drizzle olive oil and squeeze in lemon juice. Add a pinch of salt, then massage the kale for 2-3 minutes until softened.
- Sprinkle in the grated Parmesan and toss well.
- Season with salt and pepper, adding any optional extras if desired.
- Plate and serve the salad immediately.
Notes
Best enjoyed fresh, but can be stored in an airtight container for leftovers. The flavors meld beautifully if prepared ahead.
