Description

Delightful Lemon Oatmeal Crumble Bars that are sweet, tangy, and crunchy, perfect for breakfast, snacks, or dessert.


Ingredients

  • 1 ½ cups old-fashioned oats
  • 1 cup all-purpose flour
  • 1 cup brown sugar
  • ½ cup cold butter, cut into small pieces
  • 1 teaspoon baking powder
  • Zest and juice of 2 lemons
  • A pinch of salt

Instructions

  1. Gather your ingredients.
  2. Preheat your oven to 350°F (175°C) and prepare a 9×9 inch baking dish.
  3. Mix the oats, flour, brown sugar, baking powder, and salt in a bowl.
  4. Press two-thirds of the mixture into the bottom of the baking dish.
  5. Mix the lemon juice, lemon zest, and a tablespoon of sugar in another bowl.
  6. Pour the lemon mixture over the oat crust.
  7. Sprinkle the remaining oat mixture over the lemon filling.
  8. Bake for 30 to 35 minutes until golden brown.
  9. Cool completely before slicing. Optionally, sprinkle with powdered sugar.

Notes

Store in an airtight container at room temperature for 3-5 days, or refrigerate for up to a week. Freeze them wrapped tightly for up to 3 months.
