- 1 ½ cups old-fashioned oats
- 1 cup all-purpose flour
- 1 cup brown sugar
- ½ cup cold butter, cut into small pieces
- 1 teaspoon baking powder
- Zest and juice of 2 lemons
- A pinch of salt
Instructions
- Gather your ingredients.
- Preheat your oven to 350°F (175°C) and prepare a 9×9 inch baking dish.
- Mix the oats, flour, brown sugar, baking powder, and salt in a bowl.
- Press two-thirds of the mixture into the bottom of the baking dish.
- Mix the lemon juice, lemon zest, and a tablespoon of sugar in another bowl.
- Pour the lemon mixture over the oat crust.
- Sprinkle the remaining oat mixture over the lemon filling.
- Bake for 30 to 35 minutes until golden brown.
- Cool completely before slicing. Optionally, sprinkle with powdered sugar.
Notes
Store in an airtight container at room temperature for 3-5 days, or refrigerate for up to a week. Freeze them wrapped tightly for up to 3 months.
