A quick and nutritious Lemon Garlic Chicken served with fluffy quinoa, perfect for busy weeknights.
Ingredients

- 4 boneless, skinless chicken breasts
- 1 cup quinoa
- 3 cloves garlic, minced
- Juice of 2 lemons
- Zest of 1 lemon
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Rinse quinoa under cool water in a fine-mesh strainer and cook in a 2:1 ratio of water to quinoa, bringing to a boil and then simmering for 15 minutes.
- In a bowl, mix olive oil, minced garlic, lemon juice, lemon zest, salt and pepper; toss in the chicken to coat and marinate for at least 15 minutes.
- Heat a skillet over medium-high heat and cook the marinated chicken for 6-7 minutes on each side until fully cooked.
- Serve the cooked chicken atop the fluffy quinoa and garnish with fresh parsley.
Notes
You can store leftovers in an airtight container for up to 3 days in the fridge or freeze the chicken and quinoa separately for up to 3 months.
