Description

A quick and nutritious Lemon Garlic Chicken served with fluffy quinoa, perfect for busy weeknights.


Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 1 cup quinoa
  • 3 cloves garlic, minced
  • Juice of 2 lemons
  • Zest of 1 lemon
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Rinse quinoa under cool water in a fine-mesh strainer and cook in a 2:1 ratio of water to quinoa, bringing to a boil and then simmering for 15 minutes.
  2. In a bowl, mix olive oil, minced garlic, lemon juice, lemon zest, salt and pepper; toss in the chicken to coat and marinate for at least 15 minutes.
  3. Heat a skillet over medium-high heat and cook the marinated chicken for 6-7 minutes on each side until fully cooked.
  4. Serve the cooked chicken atop the fluffy quinoa and garnish with fresh parsley.

Notes

You can store leftovers in an airtight container for up to 3 days in the fridge or freeze the chicken and quinoa separately for up to 3 months.
