- 2 tablespoons maple syrup (or agave/honey)
- Zest of 1 lemon
- 3 tablespoons freshly squeezed lemon juice
- Pinch of salt
Instructions
- In a medium bowl, combine chia seeds, almond milk, maple syrup, and a pinch of salt.
- Whisk gently until everything is mixed nicely.
- Add the lemon zest and lemon juice, and stir well.
- Cover the bowl with plastic wrap or transfer to a mason jar.
- Refrigerate for at least 2 hours, preferably overnight.
- Once set, layer with your favorite fruits, nuts, or granola before serving.
