Description

Delicious Lemon Blueberry Muffins combining zesty lemon and sweet blueberries, perfect for breakfast or a snack!


Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 cup buttermilk
  • 2 large eggs
  • Zest of 1 lemon
  • 1 cup fresh or frozen blueberries
  • 1 cup powdered sugar (for glaze, optional)
  • 2 tablespoons lemon juice (for glaze, optional)
  • Zest of 1 lemon (for glaze, optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Mix the dry ingredients in a large bowl: flour, sugar, baking powder, baking soda, and salt.
  3. Combine the wet ingredients in another bowl: melted butter, buttermilk, eggs, and lemon zest.
  4. Add the wet ingredients to the dry ingredients and fold in the blueberries gently.
  5. Fill muffin cups about two-thirds full with batter.
  6. Bake for 20-25 minutes, or until a toothpick inserted in the center comes out clean.
  7. Make the lemon glaze by mixing powdered sugar, lemon juice, and lemon zest in a small bowl (if using).
  8. Devour once cooled or warm!

Notes

Do not over-mix the batter to keep muffins fluffy. If using frozen blueberries, toss them in a bit of flour before adding them to the batter.
