A spicy and savory Korean BBQ chicken sandwich topped with zesty cabbage slaw.

- 1 lb chicken breast
- 1 cup Korean BBQ sauce
- 1 teaspoon garlic powder
- 1 teaspoon ginger powder
- Salt and pepper to taste
- 2 cups green cabbage, thinly sliced
- 1 cup carrots, julienned or shredded
- 1/4 cup green onions, sliced
- 1/2 cup mayonnaise
- 2 tablespoons rice vinegar
- 1 teaspoon sesame oil
- 1 teaspoon sugar
- Sandwich buns (brioche, ciabatta, etc.)
Instructions
- In a bowl, combine Korean BBQ sauce, garlic powder, ginger powder, salt, and pepper. Add the chicken breasts and coat thoroughly. Let it marinate for at least 30 minutes.
- Preheat your grill or a non-stick skillet over medium heat. Cook the marinated chicken for about 6-7 minutes on each side until it reaches an internal temperature of 165°F (75°C). Remove chicken and let it rest for a few minutes before slicing thinly.
- In a large bowl, toss together the cabbage, carrots, and green onions.
- In a separate smaller bowl, mix mayonnaise, rice vinegar, sesame oil, sugar, salt, and pepper until smooth. Pour the dressing over the cabbage mixture and toss to coat.
- Grab your sandwich buns and toast them lightly. Layer the sliced chicken and top with the zesty cabbage slaw. Optionally drizzle extra BBQ sauce on top. Enjoy!
Notes
Make the slaw ahead of time for better flavor. Feel free to add avocado, jalapeños, or a fried egg for extra deliciousness.
