Description

A vibrant pasta salad featuring sweet corn, tangy lime, and creamy dressing, perfect for summer gatherings.


Ingredients

  • 12 oz. rotini pasta
  • 4 ears of fresh corn (or 2 cups canned corn)
  • 1 red bell pepper, diced
  • 1/2 cup red onion, finely chopped
  • 1 cup cilantro, chopped (or parsley)
  • 1 cup cotija cheese (or feta)
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • Juice of 2 limes
  • 1 teaspoon chili powder (optional)
  • Salt and pepper to taste

Instructions

  1. Boil a pot of salted water, add pasta, and cook until tender but not mushy, about 8-10 minutes.
  2. Drain pasta and rinse with cold water.
  3. Preheat grill or grill pan over medium heat.
  4. Husk corn and grill for 10-15 minutes, turning until charred. Cool and slice kernels off the cob.
  5. In a large bowl, combine cooked pasta, grilled corn, bell pepper, red onion, cilantro, and cotija cheese.
  6. In another bowl, mix mayo, sour cream, lime juice, chili powder, salt, and pepper until smooth.
  7. Pour the creamy mixture over the pasta salad and stir gently.
  8. Chill in the fridge for at least 30 minutes before serving.
