- 1 lb ground chicken
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- ½ cup fresh parsley, chopped
- 1 tsp cumin
- 1 tsp coriander
- 1 tsp paprika
- ½ tsp salt
- ½ tsp black pepper
- 1 egg
- ½ cup breadcrumbs
For the Garlic Yogurt Sauce:
- 1 cup plain Greek yogurt
- 2 cloves garlic, minced
- Juice of ½ lemon
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- In a large bowl, combine ground chicken, chopped onion, minced garlic, parsley, cumin, coriander, paprika, salt, pepper, egg, and breadcrumbs. Mix with your hands until well combined.
- Form the mixture into oval-shaped logs (like hot dogs) and place on a parchment-lined baking sheet.
- Preheat your grill to medium-high heat or the oven to 400°F (200°C). Cook the kofta for 10-12 minutes on the grill or 20-25 minutes in the oven, flipping halfway through.
- While the kofta cooks, combine Greek yogurt, minced garlic, lemon juice, olive oil, salt, and pepper in a small bowl. Adjust seasoning as needed and chill in the fridge.
