A colorful Italian Pasta Salad with vibrant veggies, zesty dressing, and tender pasta, perfect for summer gatherings.
Ingredients

- 12 ounces rotini or penne pasta
- 1 cup cherry tomatoes, halved
- 1 bell pepper, diced
- 1 small red onion, finely chopped
- 1 cup black or green olives, sliced
- 8 ounces mozzarella balls or cubed cheese
- Fresh basil or parsley, chopped
- ½ cup olive oil
- ¼ cup red wine vinegar
- 2 teaspoons Italian seasoning
- Salt and pepper, to taste
Instructions
- Boil a large pot of salted water. Add the pasta and cook according to package instructions. Drain and rinse under cold water.
- Chop the veggies while the pasta cooks.
- In a large bowl, combine the cooked pasta, chopped veggies, diced cheese, and herbs.
- In a jar, mix olive oil, red wine vinegar, Italian seasoning, salt, and pepper. Shake to combine.
- Pour the dressing over the salad and toss until well coated.
- Cover and refrigerate for at least 30 minutes before serving.
Notes
This salad can be made ahead and tastes even better after a night in the fridge. Feel free to customize it with your favorite ingredients.
