Description

A colorful Italian Pasta Salad with vibrant veggies, zesty dressing, and tender pasta, perfect for summer gatherings.


Ingredients

  • 12 ounces rotini or penne pasta
  • 1 cup cherry tomatoes, halved
  • 1 bell pepper, diced
  • 1 small red onion, finely chopped
  • 1 cup black or green olives, sliced
  • 8 ounces mozzarella balls or cubed cheese
  • Fresh basil or parsley, chopped
  • ½ cup olive oil
  • ¼ cup red wine vinegar
  • 2 teaspoons Italian seasoning
  • Salt and pepper, to taste

Instructions

  1. Boil a large pot of salted water. Add the pasta and cook according to package instructions. Drain and rinse under cold water.
  2. Chop the veggies while the pasta cooks.
  3. In a large bowl, combine the cooked pasta, chopped veggies, diced cheese, and herbs.
  4. In a jar, mix olive oil, red wine vinegar, Italian seasoning, salt, and pepper. Shake to combine.
  5. Pour the dressing over the salad and toss until well coated.
  6. Cover and refrigerate for at least 30 minutes before serving.

Notes

This salad can be made ahead and tastes even better after a night in the fridge. Feel free to customize it with your favorite ingredients.
