Description

Ingredients

  • 12 ounces udon noodles (fresh or dried)
  • 1 pound ground turkey
  • Vegetables (bell peppers, carrots, etc.)
  • ¼ cup soy sauce
  • 2 tablespoons sesame oil
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • Green onions for garnish
  • Optional toppings: sesame seeds or sriracha

Instructions

  1. Cook udon noodles according to package instructions. Chop up your vegetables, garlic, and ginger while noodles are cooking.
  2. In a large skillet over medium heat, drizzle sesame oil and add ground turkey. Cook until browned and no longer pink, about 5-7 minutes.
  3. Add minced garlic and grated ginger; stir until fragrant.
  4. Toss in chopped vegetables and soy sauce; cook for another 3-5 minutes until veggies are tender.
  5. Drain the udon noodles and add them to the skillet. Mix everything together for a couple of minutes.
  6. Serve in bowls, garnished with green onions and optional toppings.
