Description

Enjoy a comforting bowl of lasagna in soup form made easily with the Instant Pot.


Ingredients

  • 1 tablespoon Olive Oil
  • 1 pound Ground Beef (or sausage)
  • 1 Onion, diced
  • 3 cloves Garlic, minced
  • 28 ounces Crushed Tomatoes
  • 4 cups Chicken or Vegetable Broth
  • 8 Lasagna Noodles, broken into pieces
  • 1 cup Ricotta Cheese
  • 1 cup Mozzarella Cheese, shredded
  • 1 tablespoon Italian Seasoning
  • Optional: 2 cups Spinach, chopped
  • Optional: 1 cup Mushrooms, sliced
  • Optional: 1 Zucchini or 1 Bell Pepper, diced

Instructions

  1. Set your Instant Pot to sauté mode. Add olive oil, onion, and garlic. Sauté until fragrant.
  2. Add ground beef (or sausage) and cook until browned.
  3. Stir in crushed tomatoes and broth. Break lasagna noodles into smaller pieces and add them, then sprinkle Italian seasoning and stir.
  4. Seal the lid and set to high pressure for 5 minutes. Quick release when done.
  5. Stir in ricotta cheese until well combined and top with mozzarella cheese. Close the lid for a few minutes until cheese is melted.

Notes

Serve with fresh basil, crusty bread, or a side salad for a complete meal.
