Description

A comforting beef stew that warms the soul, filled with tender beef, fresh veggies, and rich flavors.


Ingredients

  • 2 lbs beef chuck, cut into 1-inch cubes
  • Salt & Pepper, to taste
  • 2 tablespoons olive oil
  • 2 large onions, diced
  • 3 cloves garlic, minced
  • 4 carrots, sliced
  • 4 stalks celery, sliced
  • 8 oz mushrooms, quartered
  • 4 cups beef stock
  • 1 cup red wine
  • 1 tablespoon tomato paste
  • 1 teaspoon dried thyme
  • 2 bay leaves
  • 1 lb potatoes, diced
  • Fresh parsley, for garnish

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Season beef with salt and pepper, then brown in the hot oil for 5-7 minutes.
  2. Remove beef and add onions, garlic, carrots, celery, and mushrooms to the pot. Sauté for 5 minutes until onions are translucent.
  3. Add the beef back to the pot along with beef stock, red wine, tomato paste, thyme, bay leaves, and potatoes.
  4. Bring to a gentle boil, then reduce heat to low, cover, and let simmer for 90-120 minutes.
  5. Once beef is tender, remove bay leaves and garnish with fresh parsley before serving.

Beef stew tastes even better the next day, make a big batch for leftovers!
