Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 8 oz brie cheese, rind removed
  • 1 cup cranberry sauce
  • Salt and pepper to taste
  • Fresh thyme or rosemary (optional)
  • Olive oil or butter for cooking
  • Toothpicks or kitchen twine

Instructions

  1. Pound the chicken breasts to about half an inch thick and season with salt and pepper.
  2. Stuff each chicken breast with cranberry sauce and a piece of brie, then fold and secure with toothpicks or kitchen twine.
  3. Heat olive oil or butter in a skillet over medium-high heat and cook the chicken for 5-7 minutes on each side until golden brown.
  4. Let the chicken rest for 5 minutes before slicing.
  5. Serve and enjoy!

Notes

Remove the rind from the brie for the best texture. Leftover cranberry sauce can be used for a gourmet twist.
