- 8 oz brie cheese, rind removed

Instructions
- Pound the chicken breasts to about half an inch thick and season with salt and pepper.
- Stuff each chicken breast with cranberry sauce and a piece of brie, then fold and secure with toothpicks or kitchen twine.
- Heat olive oil or butter in a skillet over medium-high heat and cook the chicken for 5-7 minutes on each side until golden brown.
- Let the chicken rest for 5 minutes before slicing.

Notes
