Description

Fudgy, chewy cookies with a gooey, melty marshmallow center, perfect for chilly days.


Ingredients

  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup granulated sugar
  • 2/3 cup packed brown sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup semi-sweet chocolate chips
  • 12 large marshmallows, cut in half

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the eggs one at a time, then mix in the vanilla extract until combined.
  4. In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until a dough forms.
  6. Fold in the chocolate chips until evenly distributed.
  7. Scoop about 2 tablespoons of dough, flatten it, place a marshmallow half in the center, and wrap the dough around it.
  8. Place the dough balls 2 inches apart on the baking sheet and bake for 10-12 minutes until the edges are set but the centers look soft.

Notes

Use room temperature ingredients for the best texture. Dough can be refrigerated or frozen for later baking.
