- 2 large sweet potatoes (or about 4 medium ones)
- 4 tablespoons honey
- 2 tablespoons olive oil
- 1 teaspoon cinnamon (optional)
- Salt and pepper to taste
- Optional toppings: chopped pecans, walnuts, or feta
Instructions
- Preheat your oven to 425°F (220°C).
- Peel and chop the sweet potatoes into 1-inch cubes.
- In a large bowl, combine the honey, olive oil, cinnamon, salt, and pepper. Mix well.
- Add the sweet potato cubes to the bowl and toss until coated.
- Spread the sweet potatoes on a baking sheet in a single layer.
- Roast for 25-30 minutes, flipping halfway through.
- Serve warm and add optional toppings if desired.
Notes
For a different flavor, try using maple syrup instead of honey or adding chili powder for a kick.
