Description

Delicious honey roasted sweet potatoes, perfectly caramelized for a sweet and savory side dish.


Ingredients

  • 2 large sweet potatoes (or about 4 medium ones)
  • 4 tablespoons honey
  • 2 tablespoons olive oil
  • 1 teaspoon cinnamon (optional)
  • Salt and pepper to taste
  • Optional toppings: chopped pecans, walnuts, or feta

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Peel and chop the sweet potatoes into 1-inch cubes.
  3. In a large bowl, combine the honey, olive oil, cinnamon, salt, and pepper. Mix well.
  4. Add the sweet potato cubes to the bowl and toss until coated.
  5. Spread the sweet potatoes on a baking sheet in a single layer.
  6. Roast for 25-30 minutes, flipping halfway through.
  7. Serve warm and add optional toppings if desired.

Notes

For a different flavor, try using maple syrup instead of honey or adding chili powder for a kick.
