- 2 chicken breasts
- 2 tablespoons honey
- Juice of 2 limes
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 4 cups baby spinach or mixed greens
- 1 ripe avocado, diced
- ½ cup cherry tomatoes, halved
- ¼ cup red onion, thinly sliced
- ¼ cup feta cheese
- 3 tablespoons olive oil
- 1 tablespoon honey
- Salt and pepper to taste
Instructions
- Mix the honey, lime juice, garlic powder, salt, and pepper together in a bowl.
- Marinate the chicken breasts in the marinade for at least 30 minutes.
- Grill or cook the chicken for about 6-7 minutes on each side until the internal temperature reaches 165°F.
- Rest the chicken for about 5 minutes before slicing.
- Chop the spinach or mixed greens, avocado, cherry tomatoes, red onion, and feta cheese into a large bowl.
- Mix the olive oil, lime juice, honey, salt, and pepper in a small bowl.
- Chop the rested chicken into strips.
- Toss the dressing with the salad and top with sliced chicken.
- Serve optionally with extra feta or nuts for crunch.
