Description

A quick and flavorful one-pan meal featuring tender chicken breasts, sweet dried cranberries, and creamy ricotta cheese, ready in just 40 minutes.


Ingredients

  • 4 Boneless, skinless chicken breasts
  • 1/2 cup Dried cranberries
  • 1/2 cup Honey
  • 1 cup Ricotta cheese
  • 2 tbsp Olive oil
  • Salt, to taste
  • Pepper, to taste
  • Fresh thyme, to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Pat the chicken breasts dry and season with salt, pepper, and thyme.
  3. In a small bowl, combine honey and dried cranberries.
  4. Mix ricotta cheese with olive oil, salt, and herbs.
  5. Place the seasoned chicken in a baking dish and pour the honey-cranberry mix over it.
  6. Dollop the ricotta mixture evenly on top of the chicken.
  7. Bake for 25-30 minutes or until the chicken reaches 165°F (75°C).
  8. Let cool for a few minutes before serving.
