- 4 Boneless, skinless chicken breasts
- 1/2 cup Dried cranberries
- 1/2 cup Honey
- 1 cup Ricotta cheese
- 2 tbsp Olive oil
- Salt, to taste
- Pepper, to taste
- Fresh thyme, to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Pat the chicken breasts dry and season with salt, pepper, and thyme.
- In a small bowl, combine honey and dried cranberries.
- Mix ricotta cheese with olive oil, salt, and herbs.
- Place the seasoned chicken in a baking dish and pour the honey-cranberry mix over it.
- Dollop the ricotta mixture evenly on top of the chicken.
- Bake for 25-30 minutes or until the chicken reaches 165°F (75°C).
- Let cool for a few minutes before serving.
Notes
This dish pairs well with rice, quinoa, steamed veggies, or a fresh side salad. Great for meal prep and can be frozen for later enjoyment.
