A simple yet delicious pot roast marinated in sweet and tangy Catalina dressing, perfect for family gatherings.
Ingredients

- 3 to 4 pounds beef roast (chuck preferred)
- 1 cup Catalina dressing
- 1 onion, chopped
- 1 cup carrots, sliced
- 1 cup potatoes, diced
- Salt and pepper to taste
- Garlic powder, to taste
Instructions
- Season the roast with salt, pepper, and garlic powder. Sear on all sides in a medium-high heated pan.
- Transfer the beef to a slow cooker and add chopped onions, carrots, potatoes, and Catalina dressing on top.
- Set the slow cooker on low and cook for 8 hours or on high for 4-5 hours.
- Remove the roast from the slow cooker, let it rest for 15 minutes before slicing.
