- 1 to 1.5 pounds boneless, skinless chicken breasts
- 4 cups low-sodium chicken broth
- 1 can diced tomatoes (with green chilies optional)
- 1 can black beans, drained and rinsed
- 1 can corn, drained (or frozen corn)
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 bell pepper, diced (red or green)
- 2 tablespoons taco seasoning
- Juice of 1 lime
- Salt and pepper to taste
Instructions
- Chop and dice the onion, garlic, bell pepper, and any other veggies.
- Place the chicken breasts at the bottom of the crockpot.
- Add the diced veggies, black beans, corn, and diced tomatoes.
- Sprinkle the taco seasoning over everything.
- Pour in the chicken broth, covering everything, and stir a little.
- Cover the crockpot and set it to low for 6-8 hours or high for 3-4 hours.
- 30 minutes before serving, remove the chicken, shred it with two forks, and return it to the pot.
Notes
Serve with toppings like diced avocado, shredded cheese, cilantro, and tortilla chips for added texture.
