Ingredients

  • 1 lb Ground beef (or turkey/meat substitute)
  • 1 medium Chopped onions
  • 3 cloves Garlic
  • 2 tablespoons Chili powder
  • 1 teaspoon Cumin
  • 1 can (15 oz) Tomato sauce
  • 1 can (15 oz) Kidney beans (optional)
  • 1 can (14 oz) Diced tomatoes
  • 1 Bell pepper (any color)
  • Salt and pepper to taste
  • Fresh jalapeños or serranos (optional)
  • Corn (optional)
  • Cilantro (optional)

Instructions

  1. Brown the meat in a large pot over medium heat until browned, breaking it into small chunks.
  2. Sauté the onions and garlic until the onions are translucent, about 3 minutes.
  3. Sprinkle in the chili powder, cumin, salt, and pepper, and mix well.
  4. Pour in the tomato sauce, diced tomatoes, and kidney beans, then add the bell peppers and stir until well combined.
  5. Reduce the heat to low, cover, and let simmer for about 30 minutes.
  6. Taste and adjust the seasoning before serving.

Chili often tastes even better the next day; consider making extra for leftovers.
