Ingredients

  • A whole chicken or chicken parts (thighs and breasts)
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • Fresh parsley and thyme
  • 4 cups of chicken broth (homemade or store-bought)
  • Salt and pepper to taste
  • 1 cup of noodles or rice (optional)

Instructions

  1. Chop the veggies into small pieces and set aside.
  2. Heat a large pot over medium heat, add a splash of olive oil, then sauté onions, carrots, and celery until soft and fragrant, about 5-7 minutes.
  3. Add chicken to the pot, covering it with broth, and season with salt and pepper.
  4. Bring to a gentle boil, then reduce to a simmer, and let cook for 45 minutes to an hour until the chicken is cooked.
  5. Remove the chicken, shred it, and return it to the pot. Add noodles or rice if desired.
  6. Let it simmer for another 10-15 minutes. Adjust seasoning before serving.
