Ingredients

- A whole chicken or chicken parts (thighs and breasts)
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- Fresh parsley and thyme
- 4 cups of chicken broth (homemade or store-bought)
- Salt and pepper to taste
- 1 cup of noodles or rice (optional)
Instructions
- Chop the veggies into small pieces and set aside.
- Heat a large pot over medium heat, add a splash of olive oil, then sauté onions, carrots, and celery until soft and fragrant, about 5-7 minutes.
- Add chicken to the pot, covering it with broth, and season with salt and pepper.
- Bring to a gentle boil, then reduce to a simmer, and let cook for 45 minutes to an hour until the chicken is cooked.
- Remove the chicken, shred it, and return it to the pot. Add noodles or rice if desired.
- Let it simmer for another 10-15 minutes. Adjust seasoning before serving.
Notes
For a spicy kick, add jalapeños or red pepper flakes. For a creamy version, stir in heavy cream or coconut milk at the end. Don’t forget to load it with extra veggies if you like!
