- 1 lb ground turkey or chicken (or beef)
- 1 can black beans (15 oz), drained and rinsed
- 1 can corn (15 oz), drained
- 1 can diced tomatoes (15 oz)
- 1 packet taco seasoning
- 4 cups chicken or vegetable broth
- 1 cup heavy cream (or half-and-half)
- 1 cup shredded cheese (cheddar or Mexican blend)
- Toppings: diced avocado, cilantro, tortilla strips, lime
Instructions
- In a large pot or Dutch oven, cook the ground turkey over medium heat until no longer pink, about 5-7 minutes. Season with salt and pepper.
- Add the black beans, corn, diced tomatoes, and taco seasoning. Stir and cook for an additional 2-3 minutes.
- Add the chicken or vegetable broth and bring to a gentle boil. Reduce heat and simmer for 10-15 minutes.
- Stir in the heavy cream and simmer until everything is well combined, then add the shredded cheese until melted.
Notes
For a healthier option, use low-fat cheese or swap heavy cream for Greek yogurt.
