Description

A delicious and healthy High Protein Chicken Zucchini Bake packed with flavor, protein, and veggies, perfect for busy home cooks.


Ingredients

Scale
  • 2 large chicken breasts – boneless, skinless
  • 3 medium zucchinis – sliced
  • 1 cup shredded mozzarella cheese
  • 1/2 cup Greek yogurt
  • 2 cloves garlic – minced
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • Olive oil – a drizzle for roasting
  • Optional: Cherry tomatoes, spinach or kale, red pepper flakes

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the chicken breasts into bite-sized pieces and season with salt, pepper, and Italian seasoning.
  3. Heat olive oil in a large skillet over medium heat.
  4. Add sliced zucchini and sauté for 5-7 minutes until slightly tender.
  5. Combine sautéed zucchini, chicken, minced garlic, Greek yogurt, and half of the mozzarella cheese in a large bowl.
  6. Transfer the mixture to a greased baking dish and top with remaining mozzarella cheese.
  7. Cover with foil and bake for 25 minutes, then uncover and bake for an additional 10-15 minutes until cheese is bubbly and golden.
  8. Cool for a couple of minutes before serving.

Notes

Great for meal prep! Stores well in the fridge for 3-4 days, and can be frozen for up to a month.
