Description

A comforting and customizable stovetop stew that’s perfect for chilly evenings.


Ingredients

Scale
  • Beef stew meat or chicken thighs or lentils (for vegetarian version)
  • 1 cup carrots, chopped
  • 2 cups potatoes, diced
  • 1 cup onions, chopped
  • 1 cup celery, chopped
  • 4 cups beef or chicken broth (or vegetable broth)
  • 1 cup red wine (optional)
  • Salt to taste
  • Pepper to taste
  • Fresh herbs: rosemary and thyme (to taste)
  • Fresh parsley or green onions (for garnish)

Instructions

  1. Brown your protein: Heat oil in a big pot over medium-high heat, add protein, and brown for 5-7 minutes.
  2. Sauté the veggies: Add onions, carrots, and celery; sauté until they begin to soften (4-5 minutes).
  3. Deglaze the pot: Add wine and scrape up any bits stuck to the bottom.
  4. Make it soupy: Pour in broth and add potatoes; bring to a boil then reduce to a simmer.
  5. Let it simmer: Simmer for at least 30 minutes for flavors to meld.
  6. Optional add-ins: Add beans, kale, or frozen corn in the last 10 minutes.
  7. Serve & enjoy: Ladle into bowls and garnish with fresh herbs; serve with crusty bread.
