Ingredients

- Beef stew meat or chicken thighs or lentils (for vegetarian version)
- 1 cup carrots, chopped
- 2 cups potatoes, diced
- 1 cup onions, chopped
- 1 cup celery, chopped
- 4 cups beef or chicken broth (or vegetable broth)
- 1 cup red wine (optional)
- Salt to taste
- Pepper to taste
- Fresh herbs: rosemary and thyme (to taste)
- Fresh parsley or green onions (for garnish)
Instructions
- Brown your protein: Heat oil in a big pot over medium-high heat, add protein, and brown for 5-7 minutes.
- Sauté the veggies: Add onions, carrots, and celery; sauté until they begin to soften (4-5 minutes).
- Deglaze the pot: Add wine and scrape up any bits stuck to the bottom.
- Make it soupy: Pour in broth and add potatoes; bring to a boil then reduce to a simmer.
- Let it simmer: Simmer for at least 30 minutes for flavors to meld.
- Optional add-ins: Add beans, kale, or frozen corn in the last 10 minutes.
- Serve & enjoy: Ladle into bowls and garnish with fresh herbs; serve with crusty bread.
