Ingredients

- 2–3 lbs beef chuck roast, cut into cubes
- 4 carrots, sliced
- 3 large potatoes, cubed
- 1 large onion, diced
- 4 cloves garlic, minced
- 4 cups beef broth
- 2 tbsp tomato paste
- 2 tbsp Worcestershire sauce
- Optional herbs: thyme and bay leaves
- Salt and pepper to taste
Instructions
- Prepare your ingredients by cutting the beef into substantial cubes.
- (Optional but recommended) Brown the beef in a skillet over medium heat.
- Layer the ingredients in the slow cooker: starting with onions and garlic, followed by carrots and potatoes, and then the beef.
- Mix beef broth, tomato paste, Worcestershire sauce, salt, and pepper in a bowl and pour over the layered ingredients.
- Cover and cook on low for 8-10 hours or on high for 4-6 hours.
- Check seasoning and thicken if desired before serving hot.
Notes
For extra flavor, consider using a good cut of beef and adding different vegetables or herbs. Leftovers can be stored in the fridge for up to three days.
