A comforting and flavorful beef stew that’s perfect for a cozy night in, made effortlessly in a slow cooker.


Ingredients

  • 23 lbs beef chuck roast, cut into cubes
  • 4 carrots, sliced
  • 3 large potatoes, cubed
  • 1 large onion, diced
  • 4 cloves garlic, minced
  • 4 cups beef broth
  • 2 tbsp tomato paste
  • 2 tbsp Worcestershire sauce
  • Optional herbs: thyme and bay leaves
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients by cutting the beef into substantial cubes.
  2. (Optional but recommended) Brown the beef in a skillet over medium heat.
  3. Layer the ingredients in the slow cooker: starting with onions and garlic, followed by carrots and potatoes, and then the beef.
  4. Mix beef broth, tomato paste, Worcestershire sauce, salt, and pepper in a bowl and pour over the layered ingredients.
  5. Cover and cook on low for 8-10 hours or on high for 4-6 hours.
  6. Check seasoning and thicken if desired before serving hot.

Notes

For extra flavor, consider using a good cut of beef and adding different vegetables or herbs. Leftovers can be stored in the fridge for up to three days.
