- 1 cup Beluga (Black) Lentils
- 2 Carrots, chopped
- 2 Celery stalks, chopped
- 1 Onion, diced
- 2 cloves Garlic, minced
- 2 tbsp Tomato Paste
- 4 cups Vegetable Broth
- 1 tsp Cumin
- 1 tsp Paprika
- 1 tsp Thyme
- 2 Bay Leaves
- 2 lbs Yukon Gold or Russet Potatoes, peeled and cubed
- 4 tbsp Butter
- 1/2 cup Cream
- 1 head Roasted Garlic
- Salt and Pepper to taste
- Chives for garnish
- Fresh Parsley for garnish
Instructions
- In a pot, combine lentils, carrots, celery, onion, garlic, tomato paste, vegetable broth, and spices. Bring to a boil, then simmer until lentils are tender.
- In another pot, boil the potatoes until fork-tender, then drain.
- Mash the potatoes with butter, cream, and roasted garlic until smooth. Season with salt and pepper.
- Scoop mashed potatoes into bowls and ladle the stew on top.
- Garnish with chives and parsley before serving.
