Description

A cozy, belly-warming meal that combines a hearty lentil stew with creamy mashed potatoes for the ultimate comfort food experience.


Ingredients

  • 1 cup Beluga (Black) Lentils
  • 2 Carrots, chopped
  • 2 Celery stalks, chopped
  • 1 Onion, diced
  • 2 cloves Garlic, minced
  • 2 tbsp Tomato Paste
  • 4 cups Vegetable Broth
  • 1 tsp Cumin
  • 1 tsp Paprika
  • 1 tsp Thyme
  • 2 Bay Leaves
  • 2 lbs Yukon Gold or Russet Potatoes, peeled and cubed
  • 4 tbsp Butter
  • 1/2 cup Cream
  • 1 head Roasted Garlic
  • Salt and Pepper to taste
  • Chives for garnish
  • Fresh Parsley for garnish

Instructions

  1. In a pot, combine lentils, carrots, celery, onion, garlic, tomato paste, vegetable broth, and spices. Bring to a boil, then simmer until lentils are tender.
  2. In another pot, boil the potatoes until fork-tender, then drain.
  3. Mash the potatoes with butter, cream, and roasted garlic until smooth. Season with salt and pepper.
  4. Scoop mashed potatoes into bowls and ladle the stew on top.
  5. Garnish with chives and parsley before serving.
  6. Enjoy your hearty meal!

Notes
