- 1 pound ground beef
- 1 can (15 oz) tomato sauce
- 1 cup beef broth
- 1 cup frozen mixed vegetables
- 2 cups pasta (elbow macaroni or any short pasta)
- 1 cup shredded cheese (cheddar or mozzarella)
- 1 onion, chopped
- Garlic cloves, minced
- Salt and pepper (to taste)
- Olive oil (for cooking)
- Optional: 1 teaspoon Italian seasoning or red pepper flakes
- Optional: Toppings like crunchy breadcrumbs or more cheese
Instructions
- Preheat your oven to 350°F (175°C).
- Heat a drizzle of olive oil in a skillet over medium heat. Add the onion and sauté until translucent. Then, toss in the garlic and ground beef, cooking until browned.
- Stir in the tomato sauce, beef broth, and frozen veggies. Let it simmer for about 5 minutes.
- Stir in the uncooked pasta and add salt and pepper to taste, along with any optional spices.
- Pour the mixture into a greased baking dish and top with shredded cheese.
- Cover with foil and bake for 30 minutes, then remove the foil and bake for another 15-20 minutes until the cheese is bubbly and golden.
- Let it cool for about 5 minutes before serving.
Notes
Serve with a simple green salad or garlic bread for a complete meal. Leftovers can be stored in the fridge and reheated easily.
