Description

A simple and healthy Hawaiian chicken recipe made in the crockpot that brings tropical flavors to your dinner table.


Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 1 cup pineapple chunks
  • 1 bell pepper (red, yellow, or green)
  • ½ cup low-sodium soy sauce
  • ¼ cup honey (or maple syrup)
  • 2 cloves garlic (minced)
  • 1 tsp ground ginger
  • Salt and pepper to taste
  • Optional: Sesame seeds and sliced green onions

Instructions

  1. Prep your chicken by placing chicken breasts in the bottom of the crockpot.
  2. Add the pineapple chunks on top of the chicken.
  3. Chop up your bell pepper and toss it on top of the chicken and pineapple.
  4. Mix soy sauce, honey, garlic, and ginger in a bowl, then pour it over the chicken and veggies.
  5. Sprinkle salt and pepper on top to taste.
  6. Set the crockpot on low for 6-8 hours or high for 3-4 hours.

Notes

Serve over brown rice or quinoa for a nutritious meal. Garnish with sesame seeds and green onions before serving.
