Description

A flavorful dish combining marinated Hawaiian chicken and creamy coconut rice, perfect for casual dinners or impressing guests.


Ingredients

  • 4 chicken breasts or thighs
  • 1/2 cup soy sauce
  • 1/4 cup brown sugar or honey
  • 1 cup pineapple juice
  • 1 tablespoon minced garlic
  • 1 tablespoon minced ginger
  • 1 cup jasmine rice (or any long-grain rice)
  • 1 cup coconut milk
  • 1 cup water
  • Pinch of salt
  • Shredded coconut or lime zest (optional)

Instructions

  1. Rinse the rice under cold water to remove excess starch.
  2. Combine the rice, coconut milk, water, and pinch of salt in a pot and bring it to a boil.
  3. Lower the heat, cover, and let it simmer for about 15-20 minutes. Fluff with a fork when done.
  4. Mix the chicken ingredients and marinate.
  5. Grill or cook the marinated chicken until fully cooked.
  6. Serve the chicken alongside the coconut rice and garnish as desired.

Notes

For an extra touch, drizzle additional teriyaki or chili sauce on top and serve with a side salad.
