Ingredients

- 4 chicken breasts or thighs
- 1/2 cup soy sauce
- 1/4 cup brown sugar or honey
- 1 cup pineapple juice
- 1 tablespoon minced garlic
- 1 tablespoon minced ginger
- 1 cup jasmine rice (or any long-grain rice)
- 1 cup coconut milk
- 1 cup water
- Pinch of salt
- Shredded coconut or lime zest (optional)
Instructions
- Rinse the rice under cold water to remove excess starch.
- Combine the rice, coconut milk, water, and pinch of salt in a pot and bring it to a boil.
- Lower the heat, cover, and let it simmer for about 15-20 minutes. Fluff with a fork when done.
- Mix the chicken ingredients and marinate.
- Grill or cook the marinated chicken until fully cooked.
- Serve the chicken alongside the coconut rice and garnish as desired.
Notes
For an extra touch, drizzle additional teriyaki or chili sauce on top and serve with a side salad.
