- 1 pound ground turkey
- 2 large sweet potatoes, peeled and diced
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 teaspoon paprika
- 1 teaspoon cumin
- Salt & pepper to taste
- Olive oil for drizzling
- Fresh parsley for garnish (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- Prepare the sweet potatoes by tossing them with olive oil, salt, pepper, paprika, and cumin. Spread on a baking sheet and roast for about 25 minutes, or until tender.
- Cook the ground turkey in a skillet over medium heat with olive oil, adding onions and garlic until translucent, then add the turkey and cook until browned.
- Combine the cooked turkey with the bell pepper and roasted sweet potatoes until well mixed.
- Bake the mixture in a baking dish for about 10-15 minutes to meld flavors.
- Garnish with fresh parsley and serve hot.
Notes
Feel free to add crushed red pepper for heat or cheese for a gooey topping.
