Description

A delightful bake combining ground turkey and sweet potatoes for a healthy, hearty meal.


Ingredients

  • 1 pound ground turkey
  • 2 large sweet potatoes, peeled and diced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • Salt & pepper to taste
  • Olive oil for drizzling
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prepare the sweet potatoes by tossing them with olive oil, salt, pepper, paprika, and cumin. Spread on a baking sheet and roast for about 25 minutes, or until tender.
  3. Cook the ground turkey in a skillet over medium heat with olive oil, adding onions and garlic until translucent, then add the turkey and cook until browned.
  4. Combine the cooked turkey with the bell pepper and roasted sweet potatoes until well mixed.
  5. Bake the mixture in a baking dish for about 10-15 minutes to meld flavors.
  6. Garnish with fresh parsley and serve hot.

Notes

Feel free to add crushed red pepper for heat or cheese for a gooey topping.
