Description

  • 2โ€“3 medium sweet potatoes, peeled and cubed
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped (optional)
  • 1 cup spinach or other greens
  • 1/2 cup shredded cheddar (optional but recommended)
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1/2 tsp ground cumin
  • Salt and pepper, to taste
  • Fresh herbs like parsley or cilantro for garnish

Instructions

  1. Preheat your oven to 375ยฐF (190ยฐC).
  2. Heat 2 tbsp olive oil in a large skillet over medium heat. Add diced onion and cook until translucent, about 4 minutes.
  3. Add minced garlic and cook 30 seconds until fragrant.
  4. Toss in ground turkey and break it up with a spoon. Season with smoked paprika, cumin, salt, and pepper. Cook until turkey browns and no pink remains.
  5. Stir in chopped bell pepper and spinach. Cook for 2 minutes until spinach wilts. Remove skillet from heat.
  6. In a large bowl, combine cubed sweet potatoes with a dash of oil, salt, and pepper. Option A: Roast sweet potatoes separately until tender and slightly charred (10โ€“12 minutes at 425ยฐF). Option B: Use raw cubes and let the oven finish them in the casseroleโ€”expect a slightly longer bake time.
  7. Layer half the sweet potatoes in the baking dish. Spoon the turkey-veg mixture over them. Top with remaining sweet potatoes. Sprinkle shredded cheddar on top.
  8. Cover the dish with foil and bake for 25โ€“30 minutes.
  9. Remove the foil and bake an additional 10 minutes to get golden cheese and slightly crisp edges.
  10. Let rest 5 minutes before serving.

Notes

For extra texture, consider tossing sweet potatoes in oil and roasting separately for better edges. This dish is flexible; feel free to add other vegetables or spices to your liking.
