- 1 lb ground turkey (lean)
- 2โ3 medium sweet potatoes, peeled and cubed
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, chopped (optional)
- 1 cup spinach or other greens
- 1/2 cup shredded cheddar (optional but recommended)
- 2 tbsp olive oil
- 1 tsp smoked paprika
- 1/2 tsp ground cumin
- Salt and pepper, to taste
- Fresh herbs like parsley or cilantro for garnish
Instructions
- Preheat your oven to 375ยฐF (190ยฐC).
- Heat 2 tbsp olive oil in a large skillet over medium heat. Add diced onion and cook until translucent, about 4 minutes.
- Add minced garlic and cook 30 seconds until fragrant.
- Toss in ground turkey and break it up with a spoon. Season with smoked paprika, cumin, salt, and pepper. Cook until turkey browns and no pink remains.
- Stir in chopped bell pepper and spinach. Cook for 2 minutes until spinach wilts. Remove skillet from heat.
- In a large bowl, combine cubed sweet potatoes with a dash of oil, salt, and pepper. Option A: Roast sweet potatoes separately until tender and slightly charred (10โ12 minutes at 425ยฐF). Option B: Use raw cubes and let the oven finish them in the casseroleโexpect a slightly longer bake time.
- Layer half the sweet potatoes in the baking dish. Spoon the turkey-veg mixture over them. Top with remaining sweet potatoes. Sprinkle shredded cheddar on top.
- Cover the dish with foil and bake for 25โ30 minutes.
- Remove the foil and bake an additional 10 minutes to get golden cheese and slightly crisp edges.
- Let rest 5 minutes before serving.
Notes
For extra texture, consider tossing sweet potatoes in oil and roasting separately for better edges. This dish is flexible; feel free to add other vegetables or spices to your liking.
