Ingredients

- 1 lb ground beef
- 1 medium onion, sliced thin
- 1 bell pepper, any color
- 2 cups provolone cheese (or Cheez Whiz)
- 4 sub rolls
- Salt and pepper to taste
- Olive oil (for cooking)
- Mushrooms (optional)
- Hot peppers (optional)
- Italian seasoning (optional)
Instructions
- In a skillet over medium heat, drizzle about a tablespoon of olive oil. Toss in the sliced onions and peppers and cook for 5-7 minutes until soft and slightly caramelized. Season with salt and pepper.
- In the same skillet, add the ground beef and brown it, breaking it up with a spatula, until no longer pink (about 5-7 minutes). Drain excess grease if necessary.
- Stir in the sautéed onions and peppers, mixing well. Sprinkle with Italian seasoning if desired.
- Layer provolone cheese (or Cheez Whiz) over the meat and veggie mix and cover the skillet for a minute to melt the cheese.
- Fill the sub rolls with the cheesy mixture. Optionally, place them in a preheated oven for about 5 minutes for warmth and crispiness.
