Description

Delicious and easy ground beef enchiladas, perfect for a family dinner or impressing friends.


Ingredients

Scale
  • 1 lb Ground Beef
  • 810 Tortillas
  • 2 cups Cheese (shredded)
  • 2 cups Enchilada Sauce
  • 1 Onion (chopped)
  • 2 cloves Garlic (minced)
  • 1 tsp Cumin
  • 1 tsp Chili powder
  • Salt and pepper to taste
  • Optional: Bell Peppers, Olives, Sour Cream

Instructions

  1. Preheat your oven to 350°F (175°C). Sauté chopped onions (and bell peppers if using) in oil until soft. Add ground beef and cook until browned, then mix in minced garlic.
  2. Season the beef mixture with cumin, chili powder, salt, and pepper. Stir until well combined.
  3. Spread a thin layer of enchilada sauce on the bottom of a baking dish. Fill tortillas with the beef mixture and cheese, roll them up, and place seam side down in the dish. Top with more sauce and cheese.
  4. Bake for 20-25 minutes until bubbly and golden brown.

Notes

Store leftovers in an airtight container in the fridge for up to three days, or freeze before baking.
