Delicious and easy ground beef enchiladas, perfect for a family dinner or impressing friends.
Ingredients

- 1 lb Ground Beef
- 8–10 Tortillas
- 2 cups Cheese (shredded)
- 2 cups Enchilada Sauce
- 1 Onion (chopped)
- 2 cloves Garlic (minced)
- 1 tsp Cumin
- 1 tsp Chili powder
- Salt and pepper to taste
- Optional: Bell Peppers, Olives, Sour Cream
Instructions
- Preheat your oven to 350°F (175°C). Sauté chopped onions (and bell peppers if using) in oil until soft. Add ground beef and cook until browned, then mix in minced garlic.
- Season the beef mixture with cumin, chili powder, salt, and pepper. Stir until well combined.
- Spread a thin layer of enchilada sauce on the bottom of a baking dish. Fill tortillas with the beef mixture and cheese, roll them up, and place seam side down in the dish. Top with more sauce and cheese.
- Bake for 20-25 minutes until bubbly and golden brown.
Notes
Store leftovers in an airtight container in the fridge for up to three days, or freeze before baking.
